G & T – the science behind making an exceptional Gin & Tonic

  1. Fill glass to brim with good quality ice cubes. This will chill the glass and ensure a slow melt.
  2. Cut a slice of lemon peel. Bend the peel so that the juice sprays into the glass. Throw the peel away and cut another slice with a sharp knife paying close attention to avoid any white pith. Add this to the glass. The lemon (or other citrus fruits like limes, oranges or yuzus) is best when fresh, organic and free of pesticides.
  3. Slowly pour your Do Your Gin over the ice cubes into the glass.
  4. Tilt the glass slightly and slowly pour cold tonic over the ice. A good mixing ratio between gin and tonic is 1: 3.

Match your garnish to the specific or highlighting botanicals in the gin. Lime, rhubarb, or an olive work well with dry gins, while grapefruit, citrus peel, cucumber, and rose petals work with floral gins. For a savoury gin, try rosemary, thyme, or basil with a cherry tomato.
